Our Quality Assurance Steps
- Early Morning Harvest: Pods are hand-picked in the cool early hours to keep field heat low. We harvest only mature green pods immature fruit shrivels, and partially ripened fruit turns red in transit.
- Sorting & Washing: Chillies are washed in cold, chlorinated water to remove field dirt and surface fungal spores, then dried with high-velocity air dryers so no free moisture is packed.
- Grading: Pods are sorted by size, colour and firmness to give you a uniform, retail-ready grade.
- Forced-Air Pre-Cooling: Packed cartons are placed in our pre-cooling chambers for 7 to 8 hours to bring the core temperature down to +7°C before loading.
